Lemon Chiffon Cake

Ingredients

  • 4 eggs separated
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest
  • 1 cup all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  • 1. Preheat oven to 350°F and grease a 9-inch tube pan.
  • 2. In a medium bowl, beat egg whites until stiff peaks form.
  • 3. In a large bowl, beat egg yolks with sugar until light and fluffy.
  • 4. Add oil, lemon juice, and lemon zest and mix until combined.
  • 5. In a separate bowl, combine flour, baking powder, and salt.
  • 6. Gradually add dry ingredients to egg yolk mixture and mix until combined.
  • 7. Fold in beaten egg whites until combined.
  • 8. Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • 9. Allow cake to cool in pan for 10 minutes before transferring to a wire rack to cool completely.
