Lemon Chiffon Cake
Ingredients
- 4 eggs separated
- 1 cup granulated sugar
- ½ cup vegetable oil
- ¼ cup lemon juice
- 1 teaspoon lemon zest
- 1 cup all-purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon salt
Instructions
- 1. Preheat oven to 350°F and grease a 9-inch tube pan.
- 2. In a medium bowl, beat egg whites until stiff peaks form.
- 3. In a large bowl, beat egg yolks with sugar until light and fluffy.
- 4. Add oil, lemon juice, and lemon zest and mix until combined.
- 5. In a separate bowl, combine flour, baking powder, and salt.
- 6. Gradually add dry ingredients to egg yolk mixture and mix until combined.
- 7. Fold in beaten egg whites until combined.
- 8. Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- 9. Allow cake to cool in pan for 10 minutes before transferring to a wire rack to cool completely.
