Spanish Paella

Ingredients
- 2 tablespoons olive oil
- 1 onion diced
- 2 cloves garlic minced
- 2 cups short-grain Spanish rice
- 4 cups vegetable broth
- 1 red bell pepper diced
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 cup frozen green peas
- 1/2 cup frozen artichoke hearts
- 1/2 cup frozen lima beans
- 1/2 cup frozen corn
- 1/2 cup diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped fresh parsley
Instructions
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- Add the rice and cook for 1 minute, stirring occasionally.
- Add the vegetable broth and bring to a boil.
- Reduce the heat to low and add the bell pepper, tomato paste, smoked paprika, cumin, peas, artichoke hearts, lima beans, corn, tomatoes, salt, and pepper. Stir to combine.
- Cover the pan and cook for 20 minutes, stirring occasionally.
- Turn off the heat and let the paella sit for 10 minutes.
- Sprinkle with fresh parsley and serve.
