Spanish Paella

Ingredients

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 cups short-grain Spanish rice
  • 4 cups vegetable broth
  • 1 red bell pepper diced
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 cup frozen green peas
  • 1/2 cup frozen artichoke hearts
  • 1/2 cup frozen lima beans
  • 1/2 cup frozen corn
  • 1/2 cup diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped fresh parsley

Instructions

  • Heat the olive oil in a large paella pan or skillet over medium heat.
  • Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  • Add the rice and cook for 1 minute, stirring occasionally.
  • Add the vegetable broth and bring to a boil.
  • Reduce the heat to low and add the bell pepper, tomato paste, smoked paprika, cumin, peas, artichoke hearts, lima beans, corn, tomatoes, salt, and pepper. Stir to combine.
  • Cover the pan and cook for 20 minutes, stirring occasionally.
  • Turn off the heat and let the paella sit for 10 minutes.
  • Sprinkle with fresh parsley and serve.
