Brazilian Feijoada (Black Bean Stew)

Ingredients
- 2 tablespoons olive oil
- 1 large onion chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 3 cups cooked black beans
- 1/2 cup vegetable broth
- 1/2 cup tomato sauce
- 2 bay leaves
- Salt and pepper to taste
- 1/2 pound smoked sausage cut into 1/2-inch slices
- 1/2 pound bacon cut into 1/2-inch pieces
- 1/2 pound pork shoulder cut into 1/2-inch cubes
- 1/2 cup white rice
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- 1. Heat oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- 2. Add cumin, paprika and oregano and cook for 1 minute more.
- 3. Add beans, broth, tomato sauce and bay leaves. Bring to a boil, then reduce heat to low. Simmer for 10 minutes.
- 4. Add sausage, bacon and pork and simmer for 20 minutes more.
- 5. Add rice and simmer for 20 minutes more, until rice is cooked through.
- 6. Remove bay leaves and season with salt and pepper to taste.
- 7. Garnish with parsley and serve.
