Brazilian Feijoada (Black Bean Stew)

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 3 cups cooked black beans
  • 1/2 cup vegetable broth
  • 1/2 cup tomato sauce
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/2 pound smoked sausage cut into 1/2-inch slices
  • 1/2 pound bacon cut into 1/2-inch pieces
  • 1/2 pound pork shoulder cut into 1/2-inch cubes
  • 1/2 cup white rice
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  • 1. Heat oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • 2. Add cumin, paprika and oregano and cook for 1 minute more.
  • 3. Add beans, broth, tomato sauce and bay leaves. Bring to a boil, then reduce heat to low. Simmer for 10 minutes.
  • 4. Add sausage, bacon and pork and simmer for 20 minutes more.
  • 5. Add rice and simmer for 20 minutes more, until rice is cooked through.
  • 6. Remove bay leaves and season with salt and pepper to taste.
  • 7. Garnish with parsley and serve.
