Beef Stew

Ingredients
- 2 tablespoons olive oil
- 2 lb. beef chuck cut into 1-inch cubes
- 1 onion chopped
- 4 cloves garlic minced
- 2 carrots peeled and chopped
- 2 celery stalks chopped
- 2 tablespoons tomato paste
- 2 teaspoons fresh thyme
- 2 teaspoons fresh rosemary
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 14.5 oz. can diced tomatoes
- 2 cups beef broth
Instructions
- 1. Heat the olive oil in a large skillet over medium heat.
- 2. Add the beef cubes and brown on all sides, about 5 minutes per side.
- 3. Transfer the beef to a slow cooker.
- 4. Add the onion, garlic, carrots, celery, tomato paste, thyme, rosemary, sea salt, black pepper, cayenne pepper, diced tomatoes, and beef broth.
- 5. Cover and cook on low for 8-10 hours.
