Beef Stew

Ingredients

  • 2 tablespoons olive oil
  • 2 lb. beef chuck cut into 1-inch cubes
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh rosemary
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 14.5 oz. can diced tomatoes
  • 2 cups beef broth

Instructions

  • 1. Heat the olive oil in a large skillet over medium heat.
  • 2. Add the beef cubes and brown on all sides, about 5 minutes per side.
  • 3. Transfer the beef to a slow cooker.
  • 4. Add the onion, garlic, carrots, celery, tomato paste, thyme, rosemary, sea salt, black pepper, cayenne pepper, diced tomatoes, and beef broth.
  • 5. Cover and cook on low for 8-10 hours.
