Turkey Neck Soup
- 2 lbs turkey necks
- 2 tablespoons olive oil
- 2 stalks celery, diced
- 1 onion, diced
- 2 carrots, diced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt and pepper to taste

Ingredients
- 1. Heat the olive oil in a large pot over medium heat.
- 2. Add the turkey necks and cook for about 5 minutes or until lightly browned.
- 3. Add the celery onion, carrots, and potatoes and cook for another 5 minutes.
- 4. Add the garlic chicken broth, bay leaves, thyme, and parsley and bring to a boil.
- 5. Reduce the heat to low and simmer for 1-2 hours or until the vegetables are tender and the broth is flavorful.
- 6. Season with salt and pepper to taste.
- 7. Serve hot and enjoy!
