Ragout of Mushrooms, Truffles, and Shallots
Ingredients
- 2 tablespoons olive oil
- 1/2 cup diced shallots
- 1/2 cup diced mushrooms
- 1/4 cup diced truffles
- 2 tablespoons butter
- 1 tablespoon minced garlic
- Salt and pepper to taste
Instructions
- 1. Heat the olive oil in a large skillet over medium-high heat.
- 2. Add the shallots, mushrooms, and truffles and sauté until the vegetables are lightly browned, about 5 minutes.
- 3. Add the butter, garlic, salt, and pepper and continue to sauté until the garlic is fragrant, about 2 minutes.
- 4. Serve the ragout alongside roasted partridge or other game birds.
