Ragout of Mushrooms, Truffles, and Shallots
Ingredients

olive oil
1/2
cup
diced shallots
1/2
cup
diced mushrooms
1/4
cup
diced truffles
2
tablespoons
butter
1
tablespoon
minced garlic
Salt and pepper
to taste
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the shallots, mushrooms, and truffles and sauté until the vegetables are lightly browned, about 5 minutes.
3. Add the butter, garlic, salt, and pepper and continue to sauté until the garlic is fragrant, about 2 minutes.
4. Serve the ragout alongside
roasted partridge
or other game birds.
