Ragout of Mushrooms, Truffles, and Shallots

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup diced shallots
  • 1/2 cup diced mushrooms
  • 1/4 cup diced truffles
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • Salt and pepper to taste

Instructions

  • 1. Heat the olive oil in a large skillet over medium-high heat.
  • 2. Add the shallots, mushrooms, and truffles and sauté until the vegetables are lightly browned, about 5 minutes.
  • 3. Add the butter, garlic, salt, and pepper and continue to sauté until the garlic is fragrant, about 2 minutes.
  • 4. Serve the ragout alongside roasted partridge or other game birds.
