Turkey Neck Soup

  • 2 lbs turkey necks
  • 2 tablespoons olive oil
  • 2 stalks celery, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon parsley
    • Salt and pepper to taste

Ingredients

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the turkey necks and cook for about 5 minutes or until lightly browned.
  • 3. Add the celery onion, carrots, and potatoes and cook for another 5 minutes.
  • 4. Add the garlic chicken broth, bay leaves, thyme, and parsley and bring to a boil.
  • 5. Reduce the heat to low and simmer for 1-2 hours or until the vegetables are tender and the broth is flavorful.
  • 6. Season with salt and pepper to taste.
  • 7. Serve hot and enjoy!
