Classic Pot Roast

Ingredients
- 2-3 lb. beef chuck roast
- 2 tablespoons olive oil
- 1 onion chopped
- 4 cloves garlic minced
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- 1/2 teaspoon black pepper
- 1/2 teaspoon sea salt
- 3 tablespoons tomato paste
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 3 bay leaves
- 1 lb. carrots peeled and chopped
- 1 lb. potatoes peeled and chopped
Instructions
- 1. Heat the olive oil in a large skillet over medium heat.
- 2. Add the beef chuck roast and brown on all sides, about 5 minutes per side.
- 3. Transfer the beef to a slow cooker.
- 4. Add the onion, garlic, thyme, rosemary, black pepper, sea salt, tomato paste, beef broth, Worcestershire sauce, and bay leaves.
- 5. Cover and cook on low for 8-10 hours.
- 6. Add the carrots and potatoes, cover, and cook for an additional 2-3 hours.
- 7. Remove the bay leaves, serve, and enjoy!
