Nachos are a Mexican dish made of tortilla chips covered with cheese or cheese sauce and other toppings. Nachos can include:

  • Meats, such as ground beef or grilled chicken
  • Vegetables, such as chili peppers, lettuce, tomatoes, and olives
  • Other toppings, such as beans, guacamole, salsa, and sour cream

Nachos are named after their inventor, Nacho Anaya. They were first served in 1943.

According to festival guidelines, nachos must have:

  • Tortilla chips
  • Copious amounts of melted cheese
  • Some kind of chile

Nachos are often baked or broiled.

History

Nachos were invented in the Mexican town of Piedras Negras in 1943 by Ignacio “Nacho” Anaya. Anaya was a restaurateur who created the dish to feed a group of US military wives. The town of Piedras Negras is located in Coahuila, Mexico, just over the border from Eagle Pass, Texas.

Nachos are one of the most popular snacks in the United States. However, the fact that they originated in Piedras Negras isn’t widely known outside of the region.

Nachos became popular in the United States by the 1970s.  They were introduced at a Texas Rangers game in 1976. In 1978, they were served at the Dallas Cowboys’ Stadium. By 1979, they were the most popular concession-stand item in Texas.

Nachos became more mainstream nationwide after they were served at the Dallas Cowboys’ Stadium in 1978. The Cowboys were known as “America’s Team” and often played host to ABC’s Monday Night Football. Sportscaster Howard Cosell mentioned nachos multiple times during a broadcast. After that, even movie theaters began to serve them.

Nachos were introduced at a Texas Rangers game in 1976 by San Antonio businessman Frank Liberto. They were introduced at a Dallas Cowboys football game in 1977. From there, they appeared at stadiums and movie theaters throughout the United States.

  • Salt and pepper to taste
  • 15 ounces refried beans 1 can
  • ½ cup water
  • 13 ounces thick tortilla chips 1 typical bag

Topping Ingredients:

Diced tomatoes, extra pickled jalapenos, fresh chopped cilantro, hot sauce, red pepper flakes.

  2. Add the taco seasonings, salt and pepper to taste, and stir. Cook 2-3 minutes to let the spices bloom.
  3. Stir in the refried beans and water. Mix to incorporate, then reduce the heat. Simmer for 10 minutes to develop flavor. You can simmer longer if you’d like to develop flavor further.
  4. Preheat oven to 350 degrees F.
  5. Layer the tortilla chips onto a large baking sheet.
  6. Spread the cooked meat and beans mixture evenly over the tortilla chips.
  7. Top evenly with the shredded cheeses.
  8. Top with pickled jalapeno peppers. Add as few or as many as you’d like.
