Today’s Spotlight is on Chocolate Cake.

Chocolate cake is a rich, decadent dessert with a deep chocolate flavor. It’s moist and fluffy, with a slightly bitter edge from the cocoa powder. The frosting is typically made with chocolate ganache, which is a rich and creamy mixture of chocolate and heavy cream.

Chocolate cake is made with chocolate or cocoa. The ingredients are mixed together, then put into a cake tin and put in an oven until it is fully cooked. The cake is then taken out of the oven and placed on a cooling stand.

Sugar is added to the batter, providing the desired level of sweetness that complements the richness of the chocolate. It helps balance the slight bitterness of the cocoa and enhances the overall flavor profile.

Here are some types of chocolate cake:

  • Chocolate mud cake – A cake with a rich chocolate taste and a moist texture. Its dense structure makes the chocolate flavor perfectly concentrated.
  • Chocolate fudge cake – A very chocolatey, moist cake that is similar to chocolate mud cake, but not as dense. It’s made with both melted chocolate and cocoa and topped with chocolate ganache.

History

Chocolate was originally invented to be consumed as a beverage.

The history of chocolate cake dates back to 1746, when Dr. James Baker discovered how to make chocolate by grinding cocoa beans. Until 1890, chocolate was mostly used in drinks, and was only used in cakes as fillings and glazes.

The first recipe for chocolate cake was published in 1847 by cookbook author Eliza Leslie in The Lady’s Receipt Book in Philadelphia.  However, Leslie’s recipe didn’t use cocoa powder, and instead called for chopped chocolate pieces inserted into a plain sponge.

The first chocolate cakes were simple yellow cakes with chocolate icing. German chocolate cake was first baked in the US by George Clay, a homemaker from Texas. It was named after Sam German, who invented a sweetened style of baker’s chocolate in 1852.

Pillsbury was the first to introduce a chocolate cake mix in 1948. In 1951, Duncan Hines introduced the “Three Star Surprise Mix”.

 

Here are some fun facts about chocolate cake:

  • The conching process was invented in 1879 by chocolatier Rudolf Lindt. This process created a smoother, silkier chocolate that could be used in baking.
  • Chocolate cake is a favorite of many people. The main ingredient of chocolate is cocoa, which helps the brain release endorphins.
  • In a survey, 58% of respondents named chocolate as their favorite cake flavor. Vanilla came in second place, followed by strawberry, red velvet, and raspberry.

INGREDIENTS

CHOCOLATE CAKE

  • 1 3/4 cups all-purpose flour, or (plain flour), (8 oz | 227 g)

  • 3/4 cup unsweetened cocoa powder, (2.6 oz | 75 g) or regular Hershey’s cocoa powder
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon baking soda, (or bi-carb soda)
  • 1 teaspoon salt
  • 2 cups white granulated sugar, (14 oz | 410 g)
  • 2 large eggs
  • 1 cup milk, (250 ml)
  • 1/2 cup vegetable oil, (125 ml)
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water (250 ml)

 

CHOCOLATE BUTTERCREAM FROSTING

  • 4 oz butter, (120 g | 1/2 cup)
  • 2/3 cup unsweetened cocoa powder, or regular HERSHEY’S (2.4 oz | 65 g)
  • 3 cups powdered sugar, (confectioners or icing sugar)
  • 1/3 cup milk
  • 1 teaspoon pure vanilla extract

 

INSTRUCTIONS

CHOCOLATE CAKE

  1. Preheat oven to 350°F (180°C) standard or 320°F (160°C) fan/convection.
  2. Lightly grease 2x 9-inch (22cm) round cake pans with butter. Line base with parchment paper.
  3. Sift together flour, cocoa, baking powder, baking soda and salt into a large bowl. Whisk in sugar, then add eggs, milk, oil and vanilla. Whisk well to combine until lump free, about 30 seconds.
  4. Pour boiling water into batter, mixing well. Cake batter is thin in consistency.
  5. Pour batter into cake pans and bake for 30-35 minutes or until a wooden skewer inserted into the center comes out clean.
  6. Let cool for 10 minutes, then turn out onto wire racks to cool completely before frosting.

 

CHOCOLATE BUTTERCREAM FROSTING

  1. Melt butter, then whisk in cocoa powder. Alternately add powdered sugar and milk, beating to spreading consistency (add a small amount of additional milk, if needed).
  2. Stir in vanilla.
  3. Enjoy!

According to Tastewise, the average person eats chocolate cake 2.31 times per year. The average Brit eats 2,268 slices of chocolate cake in their lifetime.

In 2022, the global consumption of chocolate was 8.13 million tons. Per capita, chocolate consumption is estimated at 1 kg per year.
