Celebrating Noodles

Oct 5, 2025 | Food Blog

Today’s focus is on Noodles.

Noodles are a type of food made from unleavened dough which is either rolled flat and cut, stretched, or extruded, into long strips or strings. Noodles are a staple food in many cultures and made into a variety of shapes.

A noodle is a long, thin strip of pasta made from flour, water, and sometimes eggs. Noodles are usually cooked in boiling water or soup. They can also be pan-fried or deep-fried. Noodles are often served with a sauce or in a soup. Noodles are springy long ribbons, like Ramen or Udon. Pasta can come in shapes like bow ties and large tubes, such as elbow macaroni.

Noodles generally contain salt, while pasta is mostly salt-free. Noodles were traditionally served in a hot or cold seasonal broth, while pasta had a sauce added.

Noodles are different from pasta because of their ingredients and the type of processing involved. Noodles are usually made with flour milled from common wheat. Pasta is processed from durum semolina, which is coarser than typical flour.

Some types of noodles include:

  • Soba – These Japanese noodles are made from buckwheat and wheat flour. They can be served hot in broth or cold with dipping sauce.
  • Rice noodles – These noodles are made from rice and water and come in different shapes and sizes. They can be thin rice vermicelli, rice stick noodles, or large, flat rice noodles.
  • Ramen – These Japanese noodles are made from wheat flour, water, salt, and an alkalizing agent. They have a springy texture and are often found as instant ramen.
  • Shirataki – These thin, chewy, and translucent noodles are made from elephant yam. They are only used in Japanese cuisine.
  • Udon – These Japanese noodles are made from wheat flour, water, and salt. They are thicker than soba noodles and can be flat or rounded. They are usually served in a simple dashi-based broth.

Other types of noodles include:

Egg noodles, Rice stick noodles, Somen noodles, Harusame noodles.

Noodles are prominent in European and Asian cuisine. They are commonly used to add body and flavor to broth soups.

History

The earliest evidence of noodles dates back to 4,000 years ago in China.  The oldest noodles were made from millet, a cereal grain indigenous to China.  The earliest written record of noodles is from a book written during China’s Eastern Han Dynasty between 25 and 220 AD.  The noodles were made from wheat dough and became a popular food for the people of the Han dynasty.

Some historians believe that noodles originated in the Middle East and were originally made with semolina and dried before cooking. Others believe that the birthplace of noodles was somewhere in Central Asia. Many Chinese believe that noodles were created in China and spread west via the voyages of Marco Polo.

Noodles were once sold as a luxury item. Before they became a budget-friendly take-out option, the first instant ramen noodle was created in Japan. Eating noodles in China is a culture all on its own. Noodles can be eaten for breakfast, lunch, or anytime you feel peckish.

The word “noodle” refers to the shape of the food, which is usually long. Many people call long pasta shaped noodles.  The word “noodle” comes from the German word “Nudeln”. In German, “Nudeln” is used to describe both Italian-style pasta and Asian-style noodles.  The word “pasta” comes from Italian and Latin.

Mitsukuni Tokugawa is believed to be the first person to eat ramen in Japan in 1697.  Ramen is a noodle dish that originated from a Chinese noodle dish.  The dish is thought to have been introduced to Japan in the 1660s by Zhu Shunsui, a Chinese neo-Confucian scholar.  Shunsui advised Mitsukuni on how to improve the taste of his udon soup. This dish is thought to be the first ramen ever made.Ramen shops became popular in Japan and China in the early 1900s. In Japan, ramen was called “Chinese soba” until the 1950s.

Instant ramen was invented in 1958 by Momofuku Ando, the Taiwanese-born founder of the Japanese food company Nissin. The first brand of instant ramen noodles was called Chicken Ramen. The invention of instant ramen was a key milestone for ramen fans because it allowed anyone to make this comfort food at home in just a few easy steps. The first instant noodles were created to feed people during a time of economic uncertainty following World War II. Japan was having difficulties feeding its population after 1945 due to rice shortages.

Ramen has its roots in Chinese noodle dishes. The origin of ramen is traced back to Yokohama Chinatown in the early 20th century. It’s believed that a noodle shop called Rai Rai Ken popularized the dish when it opened in Tokyo, Japan, in 1910.

Noodles are an ancient food that originated in China thousands of years ago. The earliest written record of noodles is from a book dated to the Eastern Han period (25–220). Noodles were a staple food for the people of the Han dynasty (206 BCE – 220 CE).

Here are some fun facts about noodles:

  • There are approximately 350 types of noodles.
  • The word “noodles” comes from the German word “Nudel”. “Nudel” may come from the old German word “Knodel” or “Nutel,” which means “dumpling” or “small knot”.
  • Instant ramen noodles were invented in Japan to cure world hunger.
  • In Japan, it is polite to slurp noodles.

  • 4-5 cloves garlic minced.
  • 28 ounces chicken broth (3 ¾ cups)
  • 2 1/2 cups milk add more if needed.
  • 1 pound linguini
  • kosher salt and black pepper to taste.
  • 1 teaspoon basil
  • 2/3 cup Parmesan cheese
  • 4 cups broccoli optional
  • 2 chicken breasts grilled and cut into strips.

Directions:

  1. In a large, 5–6-quart skillet, heat 2 Tablespoons of butter over medium heat. If you don’t have a large skillet, a stockpot works well, too. Add garlic and cook for about a minute.
  2. Add chicken broth, milk, remaining 2 Tablespoons of butter, pasta noodles, salt and pepper, and basil. Bring to a boil, stirring occasionally.
  3. Once boiling, reduce heat to a simmer stirring occasionally for 16-20 minutes or until noodles have cooked through. If you want to add broccoli, add it after about 10 minutes into the simmering process.
