Today is World Milk Day a day to recognize the importance of milk and its role in providing essential nutrients to people around the world. It’s a day to celebrate the dairy industry and its contributions to global health and nutrition. World Milk Day was first celebrated in 2001 and was established by the Food and Agriculture Organization of the United Nations. The day is celebrated on June 1st every year and is meant to recognize the importance of milk as a global food. It is also a day to celebrate dairy farmers, milk products, and the global milk industry. The day is celebrated in over 70 countries around the world with events and activities to promote milk and its benefits.

Milk has been a staple of the human diet for centuries. It was first consumed in the Neolithic period, when humans began to domesticate animals. Since then, milk has become an integral part of many cultures, including those in Europe, Asia, and the Americas.

In the United States, milk is the third most popular beverage after soda and coffee, with Americans drinking an average of 21.8 gallons per person per year. That’s a lot of milk! Globally, the average person consumes about 8.4 gallons of milk per year.

World Milk Day serves to remind us of the importance of milk in our diets. Milk is a great source of essential vitamins and minerals, including calcium, vitamin D, and potassium. Whole Milk Ricotta Pancakes

Ingredients:

  • 2 cups whole milk ricotta cheese
  • 2 large eggs
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 tablespoons butter, melted
  • 1/4 cup chopped walnuts, optional
  • Maple syrup, for serving

Instructions:

  1. In a large bowl, whisk together the ricotta cheese, eggs, honey, and vanilla extract until combined.
  2. Add the baking powder, baking soda, salt, and flour and whisk until just combined. Do not overmix.
  3. Heat a large nonstick skillet over medium-high heat. Add a teaspoon of butter to the pan.
  4. Scoop 1/4 cup of the batter into the skillet. Cook until the edges of the pancakes begin to bubble, about 1 minute. Flip the pancakes and cook until golden, about 1 minute more.
  5. Transfer the pancakes to a plate and repeat with the remaining batter, adding more butter to the skillet as needed.
  6. Serve with maple syrup, walnuts, and extra honey if desired. Enjoy!
