Carmel Popcorn Recipe
Ingredients:
-1/2 cup popcorn kernels
-1/2 cup packed brown sugar
-1/4 cup butter
-1/4 cup light corn syrup
-1/2 tsp. salt
-1/2 tsp. vanilla extract
-1/4 tsp. baking soda
Instructions:
- Preheat oven to 250°F.
- In a large pot over medium heat, melt butter. Add popcorn kernels and cover with a lid. When the kernels start popping, shake the pot or stir occasionally to prevent burning.
- When the popping slows down, remove the pot from heat and pour the popcorn into a large bowl.
- In a medium saucepan over medium heat, combine the brown sugar, corn syrup and salt. Bring to a boil and cook for 3 minutes, stirring constantly.
- Remove from heat and stir in vanilla and baking soda. The mixture will foam up a bit.
- Pour the caramel mixture over the popcorn and stir to combine.
- Spread the popcorn onto a baking sheet lined with parchment paper.
