Spumoni, or spumone, is a traditional Italian dessert that’s a frozen, layered loaf of mostly ice cream. It’s a milk sherbet, which is not quite ice cream and not quite sorbet, and has the addition of dairy, usually milk or buttermilk. This gives it a slightly creamier texture than sorbet, as well as a lighter, pastel color.

Spumoni is typically made by layering three flavors of ice cream or gelato, along with candied fruits, nuts, and whipped cream. The typical flavors in the United States are cherry, pistachio, and either chocolate or vanilla. The fruit/nut layer often contains cherry bits, which causes the traditional red/pink, green, and brown color combination. In America, spumoni is usually accompanied by butter cookies on the side, especially during wintertime.

Spumoni is popular in places with large Italian immigrant populations such as the United States, Argentina, and Brazil. August 21 is National Spumoni Day in the United States, and November 13 is National Spumoni Day in Canada. One of the most popular places to find spumoni is at L&B Spumoni Gardens, where it was originally sold door to door in Italian ice cups from a horse drawn wagon.

It’s considered bad taste to scoop spumoni, and it’s vital to slice it. Spumoni is different from ice cream because it’s a milk sherbet, which is not quite ice cream and not quite sorbet. The addition of dairy, usually milk or buttermilk, gives it a slightly creamier texture than sorbet, as well as a lighter, pastel color.

Here are some tips for slicing spumoni dessert:

  • Use a chef’s knife or serrated knife.
  • Dip the knife in warm water between each slice.
  • Run the knife under hot water and quickly dry it before each slice.
  • Slice the spumoni into 3/4-inch slices.
  • Serve immediately.
  • Serve with a dollop of whipped cream and a cherry.
  • Remove the top layer of parchment or wax paper.
  • Turn the pan on its side and gently pull on the paper to remove the whole loaf.

 

History

According to most food historians, spumoni originated in Naples, Italy sometime in the 19th century. The term “spumoni” is the plural of “spumoni”, which means “foam”. The dessert was introduced to the United States in the 1870s and became known as Neapolitan ice cream. The original spumoni was made up of nut or fruit-filled ice cream surrounding a sometimes-liquor-soaked sponge cake. Today, the term can be applied to any combination of layered ice creams.

Most food historians believe that spumoni originated in Naples, Italy in the 19th century. The word “spumoni” comes from the Italian word “spuma” which means “foam”. Spumoni is considered a traditional Christmas dessert in many parts of the United States — often served with cookies.

Spumoni was brought to the United States by Italian immigrants in the 1870s. It became known as Neapolitan ice cream.

Neapolitan ice cream was the first ice cream to combine three flavors in one container. The first recorded recipe was created in 1839 by Louis Ferdinand Jungius, the head chef of the royal Prussian household. Jungius dedicated the recipe to Fürst Pückler, and the German name for Neapolitan ice cream is “Fürst-Pückler-Eis”.

Neapolitan ice cream originated in Naples, Italy, a city known for its gelato. The classic dessert became popular in the late 19th century due to its unique combination of flavors and affordability. Neapolitan ice cream is typically served by scooping out portions of each flavor side by side. The name “Neapolitan” is a nod to the Italian flag, which features green, white, and red. The three flavors are often likened to the colors of the Italian flag, which inspired the Margherita pizza. Neapolitan ice cream is also called Harlequin ice cream because the colored stripes of the ice cream are similar to the colorful clothing of a harlequin.

According to Newsweek, only 2% of Americans choose Neapolitan ice cream as their favorite flavor.

  • According to research from Gravy Analytics, California is the state that likes ice cream the most.

 

National Spumoni Day
