Ingredients:

– 12 hot dogs
– 1 package puff pastry sheets
– 1 egg
– Cooking spray

3. Wrap each hot dog in a puff pastry rectangle, making sure to seal the edges.

Ingredients:

– 1 (3-4 pound) pork shoulder

– 2 tablespoons olive oil

– 2 tablespoons sea salt

– 2 tablespoons freshly ground black pepper

– 2 tablespoons garlic powder

– 2 tablespoons paprika

– 2 tablespoons Italian seasoning

– 2 tablespoons brown sugar

– 2 tablespoons Dijon mustard

– 1/4 cup white wine

– 2 tablespoons fresh rosemary, chopped

– 2 tablespoons fresh thyme, chopped

– 1/4 cup butter, melted

– 2 tablespoons olive oil

– 8 large flour tortillas

– 8 slices of bacon

 

Instructions:

  1. Preheat oven to 375°F.
  2. Rub pork shoulder with olive oil, sea salt, black pepper, garlic powder, paprika, Italian seasoning, and brown sugar.
  3. Place pork shoulder in a roasting pan and pour white wine over it.
  4. Bake pork in preheated oven for 1.5-2 hours, or until it is cooked through and the internal temperature reads 160°F
  5. Remove pork from oven and let cool. Once cooled, shred pork with two forks.
  6. In a medium bowl, combine Dijon mustard, olive oil, and melted butter. Stir until everything is evenly combined.
  7. Add shredded pork and fresh herbs to mustard mixture and stir until everything is evenly combined.
  8. Heat two tablespoons of olive oil in a large skillet over medium-low heat.
  9. Working one by one, place a tortilla in the hot skillet and spoon a few spoonfuls of the pork mixture onto the center of the tortilla.
  10. Fold the sides of the tortilla over the pork mixture, and wrap a slice of bacon around the entire thing. Secure with a toothpick.
  11. Place the filled tortilla in the skillet and cook for 2-3 minutes on each side, or until the bacon is crispy.
  12. Place finished pig-in-a-blanket on a plate and brush with melted butter.
  13. Serve warm and enjoy!
