He is said to have ordered toast, poached eggs, bacon, and hollandaise sauce at the Waldorf Hotel in New York City, which the chef then combined into the dish. Another story credits the invention of the dish to Commodore E.C. Benedict, who ate it at Delmonico’s Restaurant in New York in the 1880s.

The first printed recipe for Eggs Benedict is said to be in the 1894 cookbook, “The Epicurean” by Charles Ranhofer, although there are some variations in the ingredients included. Ranhofer’s recipe is for “Eggs a la Benedick” and is made with an English muffin, ham, poached eggs, hollandaise sauce and anchovies. To make the dish, an English muffin is split in half and lightly toasted. The muffin is then topped with a slice of ham, two poached eggs and a generous amount of hollandaise sauce. The dish is then finished off with a sprinkling of anchovies.

– 2 slices of ham

– 4 poached eggs

– Hollandaise sauce

– Anchovies, optional

 

Instructions:

  1. Toast the English muffins and set aside.
  2. Place a slice of ham on each half of toasted muffin.
  3. Place two poached eggs on each slice of ham.
  4. Top with hollandaise sauce.
  5. Sprinkle with anchovies, if desired.
  6. Serve and enjoy.
