Today’s Spotlight is on Cream-Filled Chocolates.

Cream-filled chocolates are chocolates with a cream filling.

Cream-filled chocolates can contain a variety of fillings, including:

  • Heavy cream, Ganache, Liqueurs, Marzipan, Fruits, Caramel, Vanilla, Mint, Brandy, Rum, Orange, Marshmallow.

Cream-filled chocolates can taste like a variety of things, depending on the filling:

  • Baileys Irish Cream: A milk chocolate with a sweet, caramel-like filling that tastes like Baileys Irish cream liquor.
  • Russell Stover: Some describe the taste as a mix between chocolate and Italian ice.
  • Chocolate truffles: Made with heavy cream, chocolate, and ganache.

Other cream-filled chocolates can contain: Liqueurs, Marzipan, Fruits, Caramel, Pecan St Rum. Cream-filled chocolates can have a shelf life of 6 to 8 weeks, while truffles have a shelf life of 2 to 4 weeks.

You can make cream-filled chocolates at home. Here are some tips for making cream-filled chocolates:

  • Use meringue powder to thicken the cream filling and give it stability.
  • Use a measuring cup to fill the mold.
  • Tap the mold to release air bubbles.
  • Keep truffles in a cool, dark place and in an airtight container.

 

History

Chocolate was originally bitter and was only consumed as a drink. Theobroma cacao, the tree that produces chocolate beans, originated in the Amazonian basin in South America. People in the Americas began domesticating the plant more than 4,000 years ago.

The Spaniards are credited with adding sugar to chocolate, making it much more flavorful. Aztec chocolate was bitter and had notes of black pepper and nutmeg. It was a very different flavor from what we know chocolate as today.

Different beans result in different flavors. American chocolatiers tend to use beans from South America, while Europeans, such as those in Great Britain, often use beans from West Africa.

The first cream-filled chocolates were created in 1912 by Belgian chocolatier Jean Neuhaus II. Before they were known as truffles, they were called pralines. Neuhaus invented the first hard chocolate shell, which allowed chocolates to be filled with soft fillings.

Filled pieces such as caramels, creams, jellies, or toffee have approximately a 6-to-8-week shelf life. Truffles have approximately a 2-to-4-week shelf life due to the fact that they are made with fresh heavy cream.

 

The name “truffle” comes from their resemblance to mushroom-like fungus, considered a delicacy of the same name. The main ingredient besides chocolate is heavy cream.

The truffle was accidentally created in the 1920s by a French chef named Georges Auguste Escoffier. While one of his apprentices was attempting to make pastry cream, he mistakenly poured the hot cream into a bowl of chopped chocolate instead of a bowl of sugar and eggs.

Swiss chocolatier Rodolphe Lindt’s 1879 invention of the conching machine allowed for mass production of smooth, creamy milk chocolate.
