Ingredients:

2- 3 lb corned beef brisket

1 large onion, peeled and cut into wedges

6-8 cloves garlic

3 bay leaves

6-8 small potatoes, peeled and quartered

4-6 carrots, peeled and cut into chunks

1 large cabbage, cored and cut into wedges

1 cup beef broth

Instructions:

1. Place the corned beef in a large pot and cover with water.

2. Add the onion, garlic, bay leaves, potatoes and carrots.

3. Bring to a boil and then reduce to a simmer. Simmer for 2-3 hours or until the corned beef is tender.

4. Add the cabbage and beef broth. Simmer for an additional 30 minutes or until the vegetables are tender.

5. Remove the bay leaves and serve.
