1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon and salt.
2. In a separate bowl, whisk together the buttermilk, apple sauce, eggs, and melted butter.
3. Make a well in the center of the dry ingredients and pour in the wet ingredients. Whisk together until just combined.
4. Heat a large skillet over medium heat and lightly grease with butter or oil.
5. Pour 1/4 cup of batter into the skillet for each pancake. Cook until the edges begin to look dry and bubbles begin to form on the surface, about 2 minutes.
6. Flip the pancakes and cook for another 2 minutes until golden brown.
7. Serve with butter, syrup, or your favorite topping.
