1. Peel and grate the potatoes. Place in a bowl of cold water and set aside.
2. In a separate bowl, combine the onion, flour, salt, and pepper.
3. Drain the potatoes and add to the onion mixture. Stir to combine.
4. Heat the butter and oil in a large skillet over medium-high heat.
5. Scoop out 1/4 cup of the potato mixture and form into a round patty. Place in the hot oil and repeat with the remaining mixture until the skillet is full.
6. Cook for 4-5 minutes on each side, or until golden and crispy.
7. Serve with your favorite condiments.
