Almond Crusted Salmon

Ingredients

  • 4 salmon fillets
  • 1/2 cup slivered almonds
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley chopped

Instructions

  • 1. Preheat the oven to 375 degrees Fahrenheit.
  • 2. Place the salmon fillets in a baking dish.
  • 3. In a food processor, pulse the slivered almonds until they’re finely chopped.
  • 4. In a medium bowl, combine the almonds, olive oil, garlic powder, onion powder, salt, and pepper.
  • 5. Spoon the almond mixture onto the salmon fillets, pressing down lightly to make sure it sticks.
  • 6. Drizzle the lemon juice over the salmon fillets.
  • 7. Bake the salmon for 20-25 minutes, or until it’s cooked through.
  • 8. Sprinkle the fresh parsley over the salmon before serving.
