Ingredients:

  • 2 sticks butter, softened (1 cup)
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 1/2 tsp. vanilla extract
  • 1/2 tsp. kosher salt
  • 2 cups all-purpose flour
  • 1 cup pecan halves, finely chopped
  • 24 pecan halves

 

Instructions:

  1. Preheat the oven to 350°F.
  2. In a large bowl, cream together the butter, brown sugar, granulated sugar, vanilla extract, and salt until smooth.
  3. Add the flour and chopped pecans to the bowl and mix until well combined.
  4. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  5. Flatten each ball slightly with the tines of a fork.
  6. Press a pecan half into the top of each cookie.
  7. Bake for 12-15 minutes, or until the cookies are lightly golden brown on the edges.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
